Fresh Tomatoes
First the asparagus, now the tomatoes. I love summer produce.
While we were at the Ballard Farmers Market we made sure to pick up some of the gorgeous tomatoes that are popping up around town/farm
Sweet summertime tomatoes are such a treat. yeah I said it, a gosh darn treat! On the other hand, a grainy tomato is one of the worst surprises ever, so I guess tomatoes are a love em or hate em kind of deal.
Let me just get this off my chest, tomatoes this good really only need some salt….yet I decided to spice it up a little bit anyway.
I made myself a sweet little snack with one of these red beauties yesterday
here’s what you’ll need:
- 1 gorgeous tomato
- a chunk of cucumber, peeled
- 2 basil leaves
- 1 tbl boursin cheese
- .5 tbl olive oil
- s&p


After I slice my tomatoes, I use a tip from Jamie Oliver and put them in a strainer and add a lot of salt. I let them stand for 20 minutes and let the extra juices run off. This simple technique helps increase the tomato flavor and makes for a delicious salad, salsa, or pasta sauce. Do not rinse the tomatoes-you can use them straight away. Just be sure to taste your final product before adding more salt!
